A banana muffin recipe ideal for a breakfast on the go or a snack.
2 tsps packed brown sugar blend
1 cup whole wheat flour
1 large egg
1 tbsp cinnamon
1 packet bananas & cream instant oatmeal
1 cup yogurt spread
1 tsp vanilla extract
2 <span class="measurestring" title="medium (7" to 7-7/8" long)">medium</span> bananas
1 dash salt
1 tsp baking powder
1 tsp baking soda
Preheat oven to 375 °F (190 °C). Lightly grease 5 muffin cups or line with muffin papers.
Mix flour, baking soda, baking powder, cinnamon, oatmeal and salt in a large bowl.
Beat bananas, sugar, egg, vanilla and melted butter in another bowl.
Stir banana mixture into flour mixture just until moistened.
Spoon batter into prepared muffin cups.
Bake in preheated oven until golden and tops spring back when lightly pressed, 18-20 minutes.
