Angel Hair with Shrimp
A pasta dish made with vegetables, shrimp and angel hair pasta, sliced almonds with marinara sauce.
12 oz angel hair pasta dry
2 tbsps extra virgin olive oil
1/2 young green onions, chopped
2 tbsps parsley
3 tsps minced garlic
1/2 cup carrots, sliced
1/2 tsp crushed red pepper flakes
2 tbsps basil
1 cup marinara pasta sauce
1 cup shrimp
1/4 cup lemon juice
3 1/2 oz dry table wine
1/4 cup shredded parmesan cheese
1/4 cup sliced almonds
1 dash salt
1 dash black pepper
Heat oil in large skillet over medium-high heat until hot. Add onion, parsley, garlic, and carrots, stir well.
Add red pepper flakes, salt and pepper. Continue cooking about 5 minutes until onion is browned, stirring frequently.
Add marinara sauce and fresh basil. Cook 4 minutes stirring occasionally.
Meanwhile cook pasta according to package directions.
Place shrimp in skillet. Pour lemon juice and wine over shrimp. Cook 2 minutes
Drain pasta. Toss pasta with sauce and all the ingredients in skillet. Top with parmesan cheese and toasted almonds.
