Almond Cranberry Maple Quinoa Salad
Delicious and hearty quinoa salad.
1/2 cup red quinoa
1/2 cup white quinoa
1/2 cup dried cranberries
1/2 cup almonds
2 large scallions
1/4 cup extra virgin olive oil
2 tbsps 100% maple syrup
1/4 tsp salt
2 tbsps rice vinegar
Combine white quinoa, red quinoa and 1 1/2 cups of water in a pot. Bring to a boil, reduce heat, cover pot and simmer for 15-20 minutes.
Remove pot from heat and allow quinoa to steam for another 10 minutes. Transfer quinoa to bowl, fluff and cool to room temperature.
Add cranberries, almonds and chopped scallions.
In a separate bowl, make the dressing: rice vinegar, olive oil, maple syrup and salt.
Add dressing to quinoa mixture and mix well.
