Almond Chai
A fairly traditional Kashmir chai blend but made with almond milk.

  1. Pour 2 cups of water into a pot. Add all the whole spices, smashing the cardamom with the back of a spoon.
  2. Bring to a boil. Let simmer until the mixture is a dark brown and 3/4 of the liquid is gone (about half an hour).
  3. Add the tea leaves. Stir and let steep for a few seconds.
  4. Add the honey and almond milk.
  5. Bring almost to a boil. Pour into a glass through a big tea strainer or sieve.
  6. Sprinkle with some cinnamon.
