Preheat oven 350°F and spray 8”x8” baking dish with cooking spray. |

Put olive oil in a large skillet over medium high heat. |

Add diced sweet potatoes and water. Cook for 6-8 minutes or until the water evaporates, then add onions and bell peppers. |

Cook for 5 minutes until vegetables are soft. Remove from heat and set aside. |

Whisk together milk, eggs, and spices. |

Fold in cooked vegetables and drained diced tomatoes. |

Pour egg mixture into the baking dish and cook for 45-50 minutes or until the egg has set in the middle. |
