Slice bitter melon then massage with salt. Set aside for 5-10 minutes. Rinse with cold water then drain. |

Chop garlic, shallots, and tomatoes. Slice the chicken in cubes. |

Sauté garlic, shallots, and tomatoes in a non-stick pan. |

Adjust the heat to high then add chicken. When the chicken is almost cooked, add a splash of water to prevent it from drying and clumping. |

Season with fish sauce and black pepper. |

Add the drained bitter melon and stir lightly. Cook for 2 minutes. |
