1. | Pre-heat oven to 350° F (175° C). Lightly grease a baking dish. Wash and dry tilapia. |
2. | In a bowl, pour lemon juice and a little salt and pepper. Dip tilapia in the lemon juice. |
3. | Mix crushed crackers and parmesan cheese together. |
4. | Dip tilapia fillets in the cracker mixture. Lay in a greased baking dish. |
5. | After all tilapia is covered. Sprinkle remaining over the fish in the baking dish. Sprinkle olive oil over the tilapia. |
6. | Place in the oven and let bake for 30 minutes or until golden brown. Remove from oven and serve. |
