Blueberry Pancakes with Syrup
Perfect blueberry breakfast pancakes.
1 cup whole wheat flour
1 cup all purpose white wheat flour
1/4 cup sugar
2 tsp baking powder
1/4 tsp salt
2 large eggs
1 cup 1% fat buttermilk
1 cup 1% fat milk
2 tbsps unsalted butter
1 cup blueberries
1/4 cup blueberry syrup
Beat eggs with buttermilk and melted butter.
Combine the dry with wet into lumpy batter, being careful not to over mix.
Heat non-stick pan with a little butter and spoon 1/4 cup of batter.
Sprinkle 8-12 blueberries and let cook 2-3 minutes then turn over.
Serve with blueberry syrup.
