Baked Oatmeal Cupcakes
Soft oatmeal cups for breakfast on the go.
5 cups oats
1 1/2 cups mashed banana
1 tsp salt
1/3 cup 100% maple syrup
1 cup chocolate chips
2 1/3 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
5 tbsps coconut oil
1/2 cup unsweetened applesauce
1 tbsp vanilla extract
1/4 cup flaxseed meal
Preheat oven to 375 °F (230 °C). Prepare muffin tins with liners or non-stick spray.
Combine dry ingredients in one bowl and wet ingredients in a second bowl.
Add wet ingredients to dry ingredients and stir to combine.
Spoon batter into 32 muffin tins and cook for 25 minutes. Cool on wire rack.
Note: can be frozen.
