Apple-Pecan muffins without applesauce but no less fabulous.

Ingredients

Directions

1. Pre-heat oven to 400 °F (200 °C). Coat a 12 cup muffin pan with spray.
2. In a small bowl, mix 2 tablespoons of brown sugar with pecans and cinnamon. Set aside.
3. In a medium bowl, whisk both flours, baking soda and salt.
4. In a large bowl whisk remaining brown sugar and oil until combined. Add eggs one at a time, whisking to incorporate completely. Add vanilla.
5. Stir into large bowl flour mixture, 1/2 at a time, alternating with buttermilk until just combined.
6. Pour mixture into muffin pan, filling each 2/3 full. Top with pecan cinnamon mixture. Bake for 20 minutes or until toothpick comes out clean.
